You can probably tell by now that part of my daily routine includes cooking for little people! Well, little people that includes a teenager that consumes food like a vacuum! While I love cooking up lovely meals and sharing them, the reality is that I want this site to also be a great place for families. That includes busy moms trying to find food for lunch, snacks, brunch, dinner, and food that kiddos will enjoy!

Are these taco pop tarts like empanadas?

Yes, the look of this recipe would be like a homemade empanada. But the difference is that the entire taco toppings and goodness is inside the crust for deliciousness bite after bite. 

What other ingredients can you add to these homemade taco pop tarts?

Great question. This is one where you can give the answer! Anything that you like can be added to this recipe. If you like a little spice, add em some jalapenos. (or even some chili seasoning) It’s really that simple to modify! Want a bit more onions than what this recipe calls for? Chop them up and add them in! 

Can you make this taco pop tart vegetarian?

Sure! If you don’t want to add in the beef, you don’t have to. Simply omit that step from the directions below and add in some extra vegetables and beans instead. Beans are always a great substitute for meat so that way, you can be certain that you’re getting your protein, too. 

What other meat besides beef can you use in this recipe?

Whatever you’d like. (notice a trend here!) If you want chicken, make it with chicken. Want to cut down on some of the fat content from the beef? Cook it up with ground turkey instead. There is literally no wrong way to make this recipe as long as you’re cooking everything thoroughly and getting it done.

So with that said…. let’s talk about Taco Poptarts…..

I bet you’re reading the title of this post and thinking, “What”?! (Don’t worry, I’m not crazy – just creative!) That’s right- taco pop tarts!!! These aren’t really for breakfast, though. These make an amazing meal for that messy eater in your family…or the one who has a hard time eating separately. Plus, they are delicious! Remember, they are tacos, so you can add in anything to this recipe! This recipe is also kid tested and mother approved! You can even have your little ones help you prepare this! Win-win, right?!

Ingredients

– 1 Pkg. Taco Seasoning (we use low sodium)
– ½ lb. Ground beef, cooked and crumbled
– ½ cup Refried Beans
– 14 oz. pkg. Pie Crusts
– 8 oz. pkg. Shredded Cheddar Cheese
– ½ cup Sour Cream
– Shredded Lettuce
– Green Onion

Directions

1. Preheat oven to 400 degrees.
2. Mix a teaspoon of the taco seasoning into the sour cream and set aside.
3. Mix the ground beef with the remaining taco seasoning.

 
4. Unroll the pie dough, and place one piece on top of the other. Cut off the
rounded edges to make a large square and cut that into four rectangle pieces,
each stacked on top of another.


5. Spread refried beans onto 4 of the pieces, and sprinkle ground beef on top of
the beans.
6. Put some cheese over the beef and place each of the other pieces of pie dough
over the top of the mixture.


7. Take a fork and press all the edges together on each of the pop tarts, and poke
some holes on the top crust with the fork.

8. Bake for about 10-12 minutes or until golden brown.
9. Drizzle the sour cream taco seasoning mixture over each pop tart and serve
with shredded lettuce, onion, and extra cheese.

10. Enjoy!

Truth be told, these are one of my favorite lunches for my kids.

They love the taste of them first off…and secondly, they’re just really, really simple. This is a great grab and go type lunch that fits perfect into our lifestyle. 

One other thing that’s actually really, really great about this recipe is that you can have everyone in your family make their own taco pop tart just like they want it. That way, you aren’t having to make the same recipe over a few different times. Have your kiddos line up, let them fill up their crusts with all the meat, cheeses and veggies that they want and anything else they may find that they need, and have them get it ready for the oven.

And just like that, they’ve taken charge and created their own lunch or dinner with a taste that they’re going to love as well!
