Homemade Cadbury Birds Nest Cookies

Homemade Cadbury Birds Nest Cookies are the perfect dessert to serve throughout the next round of holidays. These decadent delicacies are perfect for school parties, church gatherings, family game or movie night, welcoming new neighbors, school parties, or just because you have a sweet tooth. These cookies are colorful, bright, sweet the last crumb, and a welcomed sight. 

While my husband was active duty, we spent, on average, a little less than 2-3 years per duty assignment. In fact, his last 10 years in the Army sent us from one side of the country to the other side of the country and back until he finally landed in South Korea. Some moves were harder for me and the kids to adjust than others. The holidays seemed unfamiliar when we weren’t able to spend time together. Unfortunately, we were apart for many holidays. 

Kid-Friendly Cadbury Egg Sugar Cookies 

As I reminisce about all the times my husband was away on deployments and training exercises, I was also reminded of the times the boys and I tried to make life more enjoyable while Daddy was away. One of the things we would do to occupy our minds was to make these Homemade Cadbury Birds Nest Cookies. Watching the kids help roll out the dough, use the cookie cutter and placing it on the baking sheet brought a lot of laughter in the kitchen during those times. 

We spent many afternoons decorating sugar cookies and just enjoying each other. It was the perfect way to brighten up my sad day. Once we finished, we would “taste test” our creations and box the rest up. Then we would deliver some to all of our neighbors and send some to Daddy overseas-minus any chocolate. It was a great way to give back to others and help me overcome my sadness. 

Each year, we make these around Easter. Each year, I’m always reminded how a little sugar cookie turned my sadness from missing my husband into blessings. 

How to Make Cadbury Egg Sugar Cookies 

I used a sugar cookie mix for this recipe. But, if you have a homemade sugar cookie recipe you love, go for it. I just kept the same recipe I started with years ago because it was easy.

It’s honestly a fairly simple recipe. Prepare the dough, bake the cookies, fill them in with frosting, and top with your Cadbury shimmer mini eggs. Quick, easy, and sweet as can be. 

What If I Can’t Find Cadbury Mini Eggs 

If you can’t find any Cadbury mini eggs, no problem. You can reach for jelly beans, egg-shaped chocolates, or any other type of Easter egg-shaped candy.

These cookies are sure to bring a smile to any child. My boys’ faces light up when they see these birds nest cookies. My husband’s face lights up, also! This recipe will continue to be a staple in our family and will also serve as a reminder of the little blessings when I needed them.  

The best part of all about these Easter cookies is they take hardly any time to make. Decorating them is rather easy (and fun!) since you don’t need to pipe them or do special designs! 

 

Homemade Cadbury Birds Nest Cookies

 

Ingredients:

1 Package of Sugar Cookie Mix (Now that we have soy issues, I do use King Arthur. You will want to make it according to the back of the package) 

8 oz Cream Cheese

1/2 Stick of Butter

1 1/3 Cup Powdered Sugar

1 Teaspoon Vanilla Extract

Food Coloring (Watkins does NOT have artificial dyes)

1 Package Cadbury Shimmer Mini Eggs (or similar)

How to Make The Cookies:

Prepare cookies using directions on the back of the package.

Create 1” dough balls and press the balls down in the center and build up the edges so that you make a “birds nest”. You will want the bottom of the cookies to be very thin.

Bake at 350 degrees for 7-8 minutes or until the edges start to lightly brown. Do not over cook.

Remove from oven and leave the cookies on the baking sheet.

Press the cookies down in the center before they cool so that they keep the “birds nest shape”.

Allow cookies to cool completely.

 

Cream Cheese Frosting:

Soften Cream Cheese and Butter.

Add in Vanilla and mix well.

Slowly add in Powdered Sugar and mix well.

Separate icing into 3 different containers.

Add desired colors with a toothpick so that the colors do not get too dark.

Mix well.

Once your cookies are cooled and the icing is colored, fill cookies with cream cheese icing and add Cadbury Chocolate Eggs to garnish.
